Ingredients

Marinade

  • 2 lbs boneless, skinless chicken thighs
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 4 cloves garlic, minced
  • 1.5 tsp ground cumin
  • 1.5 tsp ground paprika
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 0.5 tsp ground cardamom
  • 0.5 tsp ground cinnamon
  • 0.5 tsp cayenne pepper (optional)
  • 1 tsp salt
  • 0.5 tsp black pepper

Garlic Yogurt Sauce

  • 1 cup plain full-fat Greek yogurt
  • 2 cloves garlic, finely grated
  • 1 tbsp fresh lemon juice
  • 1 tbsp extra virgin olive oil
  • 0.25 tsp salt
  • 1 tbsp fresh dill or parsley, chopped

Rice

  • 1.5 cups basmati rice
  • 2 tbsp unsalted butter
  • 0.5 tsp ground turmeric
  • 1 cinnamon stick cinnamon stick
  • 2.25 cups water or low-sodium chicken broth
  • 1 tsp salt

Additional Garnishes & Sides

  • Fresh parsley, chopped
  • Pickled cucumbers or turnips
  • Lemon wedges
  • Grilled or raw red onion slices

Instructions 

  • Marinate chicken with spices, olive oil, lemon juice, and garlic for at least 30 minutes.
  • Cook marinated chicken in a skillet until browned and cooked through, about 8-10 minutes per side.
  • Prepare garlic yogurt sauce by mixing yogurt, grated garlic, lemon juice, olive oil, salt, and herbs.
  • Cook rice with butter, turmeric, cinnamon stick, water or broth, and salt until tender, about 15 minutes.
  • Assemble the dish with sliced chicken, rice, and garnishes like parsley, pickles, lemon wedges, and onion slices.

Notes

For extra flavor, marinate the chicken overnight and serve with warm pita bread.
