A quick and flavorful cold pasta salad combining tender chicken, fresh vegetables, and pesto for a satisfying meal.

Ingredients

Pasta

  • 1 lb Pasta Rotini or Fusilli

Protein

  • 2 cups Shredded Chicken

Sauce

  • 1 cup Pesto

Vegetables

  • 1 cup Cherry Tomatoes sliced in half
  • 0.5 cup Mozzarella Pearls
  • 0.25 cup Parmesan
  • a handful Spinach

Nuts

  • toasted Pine Nuts or Walnuts Toasted Pine Nuts or Walnuts

Seasoning

  • to taste Salt and Pepper

Instructions 

  • Cook pasta in salted boiling water until al dente, then drain and rinse with cold water.
  • Chop tomatoes and shred cooked chicken.
  • In a large bowl, combine pasta, chicken, tomatoes, spinach, and pesto.
  • Toss to coat everything evenly, then fold in mozzarella pearls and top with Parmesan and nuts.
  • Serve immediately or chill for later.

Notes

Use fresh pesto for best flavor and adjust seasoning as needed.
