Enjoy a flavorful and colorful bowl of chicken fajitas served over rice with fresh vegetables and toppings.

Ingredients

For the Chicken Marinade

  • 1.5 lbs boneless, skinless chicken breasts, sliced into strips
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon chili powder
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

For the Fajita Veggies

  • 1 tablespoon olive oil
  • 1 red bell pepper red bell pepper, sliced
  • 1 yellow bell pepper yellow bell pepper, sliced
  • 1 green bell pepper green bell pepper, sliced
  • 1 medium red onion red onion, sliced

For the Bowls

  • 3 cups cooked white or brown rice
  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 avocado sliced
  • 0.25 cup chopped fresh cilantro

Lime wedges

Instructions 

  • Marinate the chicken by combining it with olive oil, lime juice, and spices; refrigerate for at least 15 minutes.
  • Heat a skillet over medium-high heat, cook chicken for 5-6 minutes until golden and cooked through; set aside.
  • In the same skillet, sauté bell peppers and onion for 5-7 minutes until soft and charred.
  • Divide rice into bowls, top with chicken, sautéed veggies, black beans, corn, avocado, and cilantro.
  • Garnish with lime wedges and serve.

Notes

For extra flavor, marinate the chicken longer or add your favorite toppings.
