A quick and flavorful pasta salad combining tender chicken, crisp romaine, and a tangy Caesar-inspired dressing.

Ingredients

Dressing

  • 2 teaspoons Dijon mustard
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons Worcestershire sauce
  • 3/4 cup mayonnaise
  • 2 teaspoons minced garlic
  • 1 teaspoon anchovy paste
  • 1/3 cup finely grated Parmesan cheese

Main ingredients

  • 8 oz uncooked pasta, such as rotini or penne (Use any short pasta shape you prefer)
  • 2 hearts Romaine, chopped
  • 2 cups shredded rotisserie chicken or chopped chicken breasts (Using pre-cooked chicken can speed up prep time)
  • Optional Croutons (Add for extra crunch)
  • Parmesan cheese for serving

Instructions 

  • Cook pasta according to package instructions; drain and let cool.
  • In a bowl, whisk together Dijon mustard, lemon juice, Worcestershire sauce, mayonnaise, garlic, and anchovy paste to make the dressing.
  • Combine cooked pasta, chopped romaine, shredded chicken, and dressing in a large bowl; toss to coat.
  • Top with Parmesan cheese and croutons if desired; serve immediately.

Notes

For a lighter version, use Greek yogurt instead of mayonnaise.
