A delicious and easy-to-make pasta salad combining tender chicken, crisp romaine, and a flavorful Caesar dressing.

Ingredients

Pasta

  • 12 ounces rotini pasta
  • 1 lb cooked chicken breast, sliced or diced (seasoned with lemon-pepper)

Lettuce

  • 3 large heads Romaine lettuce (rinsed, dried, chopped)
  • 1 cup cherry tomatoes (sliced)
  • 1 cup seasoned croutons
  • 0.5 cup freshly grated Parmesan cheese
  • 1 cup mayonnaise
  • 0.33 cup sour cream
  • 2 cloves garlic (minced)
  • 1 lemon juice of lemon
  • 2 teaspoons anchovy paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dijon mustard
  • 0.5 cup freshly grated Parmesan cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper

Instructions 

  • Cook the rotini pasta according to package instructions, then drain and let cool.
  • In a large bowl, combine cooked pasta, chicken, lettuce, cherry tomatoes, croutons, and Parmesan cheese.
  • In a separate bowl, whisk together mayonnaise, sour cream, garlic, lemon juice, anchovy paste, Worcestershire, mustard, salt, and pepper.
  • Pour dressing over the salad and toss to combine.
  • Serve immediately or refrigerate until ready to serve.

Notes

For extra flavor, add a sprinkle of additional Parmesan or a dash of hot sauce.
