A quick and flavorful one-pan meal combining tender chicken, beans, rice, and cheese for a satisfying dinner.

Ingredients

Oil

  • 2 tablespoons canola oil

Chicken

  • 1 pound boneless skinless chicken breasts, cut into bite-size pieces

Vegetables

  • ½ cup chopped yellow onion

Spices

  • 2 tablespoons taco seasoning mix (from 1.25-oz pkg)

Canned Goods

  • 1 can (15 oz) Rosarita® Premium Whole Black Beans, drained, rinsed
  • 1 can (10 oz) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained

Liquids

  • 1 cup water

Grains

  • 1-¼ cups instant brown rice, uncooked

Cheese

  • 1 cup shredded Cheddar and Monterey Jack cheese blend

Herbs

  • to taste Chopped cilantro, optional

Instructions 

  • Heat oil in a large skillet over medium-high heat.
  • Add chicken and cook for 3 minutes, stirring occasionally.
  • Add onion and taco seasoning; cook for 2 minutes.
  • Stir in beans, tomatoes, and water; bring to a boil.
  • Stir in rice, cover, and simmer for 7-10 minutes until rice is tender.
  • Stir in ½ cup cheese, then sprinkle remaining cheese and cilantro on top.

Notes

For extra flavor, add a squeeze of lime or serve with sour cream.
