Chicken

boneless skinless chicken breasts, cut into bite-size pieces
Vegetables

chopped yellow onion
Spices

taco seasoning mix (from 1.25-oz pkg)

Rosarita® Premium Whole Black Beans, drained, rinsed

Instructions
Heat oil in a large skillet over medium-high heat.
Add chicken and cook for 3 minutes, stirring occasionally.
Add onion and taco seasoning; cook for 2 minutes.
Stir in beans, tomatoes, and water; bring to a boil.
Stir in rice, cover, and simmer for 7-10 minutes until rice is tender.
Stir in ½ cup cheese, then sprinkle remaining cheese and cilantro on top.
Notes
For extra flavor, add a squeeze of lime or serve with sour cream.
