Ingredients

For the Chicken

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 0.5 tsp ground cumin
  • to taste Salt and pepper
  • 1 none Juice of 1 lime

For the Coconut Rice

  • 1 cup jasmine or basmati rice
  • 1 cup canned coconut milk full fat
  • 1 cup water
  • 0.5 tsp salt

For the Mango Salsa

  • 1 ripe mango diced
  • 0.5 red bell pepper diced
  • 0.25 red onion finely chopped
  • 1 small jalapeño minced (optional)
  • 2 tbsp chopped fresh cilantro
  • 1 lime juice
  • a pinch salt

Optional Toppings

Instructions 

  • Rinse rice until water runs clear, then combine with coconut milk, water, and salt. Bring to a boil, then simmer covered for 15 minutes. Let sit for 5-10 minutes, then fluff.
  • Toss chicken with olive oil, garlic powder, paprika, cumin, lime juice, salt, and pepper. Cook in a skillet over medium heat for 5-6 minutes per side until cooked through. Rest and slice.
  • Combine mango, red bell pepper, onion, jalapeño, cilantro, lime juice, and salt to make the salsa. Chill until ready to serve.
  • Assemble bowls starting with coconut rice, topped with sliced chicken, mango salsa, and optional toppings.

Notes

Use fresh ingredients for best flavor and adjust spice levels to taste.
