Ingredients

Protein

  • 2 cups cooked chicken breast, shredded (approx. 300g)
  • 1 large ripe Hass avocado, pitted and cubed
  • 1/4 cup plain Greek yogurt
  • 1 tbsp fresh lime juice
  • 2 tbsp fresh cilantro, chopped
  • 1/4 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper

Tortillas

  • 2 large 10-inch whole-wheat tortillas

Vegetables

  • 1 cup fresh baby spinach
  • 1/4 cup shredded Monterey Jack cheese

Instructions 

  • Mix shredded chicken with Greek yogurt and garlic powder.
  • Stir in lime juice, salt, pepper, and cilantro.
  • Fold in cubed avocado gently.
  • Warm tortillas briefly, then layer spinach and filling.
  • Sprinkle cheese, fold, roll, and sear in skillet for 2 minutes.

Notes

For extra flavor, add a dash of hot sauce or additional herbs.
