Delicious and healthy chicken and avocado stuffed pita pockets, perfect for a quick lunch or dinner.

Ingredients

Protein

  • 0.5 pound shredded cooked rotisserie chicken

Produce

  • 2 avocados avocados (hollowed and cut into small pieces)
  • 6 cherry tomatoes cherry tomatoes (quartered)

Dairy

  • 0.5 cup plain Greek yogurt
  • 4 slices thin baby Swiss cheese

Condiments & Seasonings

  • 1 teaspoon cilantro (divided)
  • 1 teaspoon garlic salt
  • 0.5 lemon juice from half a lemon
  • 1 tsp extra virgin olive oil

Bread & Grains

  • 4 pita pockets whole wheat pita pockets

Instructions 

  • Insert a slice of Swiss cheese into each pita pocket.
  • Mix Greek yogurt with garlic salt and set aside.
  • Combine avocado, tomatoes, lemon juice, and half of the cilantro; set aside.
  • Cook chicken with olive oil and half of the cilantro for 3-4 minutes, then add 1/4 to each pita.
  • Drizzle yogurt mixture and add avocado mixture into each pita.
  • Serve cold or grill for 2 minutes for warm.

Notes

For extra flavor, sprinkle with additional cilantro or add hot sauce.
