Chicken-Avocado Caprese Salad

A fresh and flavorful salad combining grilled chicken, creamy avocado, mozzarella, and basil, drizzled with a balsamic vinaigrette.

Ingredients

Dressing

  • 3 tbsp balsamic vinegar
  • 1 tbsp pure maple syrup
  • 1 tsp Dijon mustard
  • Kosher salt Kosher salt
  • 1/2 c. extra-virgin olive oil

Chicken

  • 2 pieces boneless, skinless chicken breasts (about 1 lb. total)
  • 3/4 tsp Italian seasoning
  • to taste Freshly ground black pepper

Salad ingredients

  • 2 heads romaine lettuce (thinly sliced, about 8 cups)
  • 2 small or 1 large avocado (halved, thinly sliced)
  • 1 (12-oz.) container mini mozzarella balls (drained, halved or quartered if large)
  • 1 c. cherry or grape tomatoes (halved)
  • 1/2 c. fresh basil leaves (thinly sliced)

Instructions 

  • Whisk vinegar, syrup, mustard, and salt; slowly add oil to make dressing.
  • Pound chicken to 1/2" thickness, season, and marinate with 1/4 cup balsamic dressing for 15 minutes.
  • Grill chicken until golden and cooked through, then let cool slightly and slice.
  • Divide lettuce, avocado, mozzarella, tomatoes, and basil among bowls; top with sliced chicken and drizzle with dressing.

Notes

Use fresh ingredients for best flavor and serve immediately.
