A hearty and flavorful chili combining tender chicken, sweet apples, and beans, topped with melted cheese for a comforting meal.

Ingredients

olive oil

  • 0.25 cup olive oil (divided)
  • 1.5 lbs chicken tenders (cut into bite-size pieces)
  • 4 tsp chili powder
  • 2 tsp ground cumin
  • 2 apples apples (peeled and cut into 1/2-inch cubes)
  • 1 medium onion (chopped)
  • 4 Tbsp unsalted butter
  • 0.25 cup all-purpose flour
  • 2 cups chicken stock or storebought
  • 0.75 cup milk
  • 2 15 oz. cans of pinto or white beans (drained and rinsed)
  • 2 cups shredded Monterey or Mexican blend cheese (about 8-ounce bag)

Kosher salt and pepper

Instructions 

  • Heat 2 tbsp olive oil in a Dutch oven. Cook chicken with chili powder, cumin, salt, and pepper until no longer pink. Transfer to a bowl.
  • Add remaining oil, cook apples and onions with salt until softened, then combine with chicken.
  • Melt butter, whisk in flour, then gradually add stock and milk, cooking until thickened.
  • Stir in chicken-apple mixture, beans, season, simmer 5 minutes, then stir in cheese until melted.

Notes

Serve with toppings like sour cream, scallions, or tortilla chips for added flavor.
