Instructions
Heat 2 tbsp olive oil in a Dutch oven. Cook chicken with chili powder, cumin, salt, and pepper until no longer pink. Transfer to a bowl.
Add remaining oil, cook apples and onions with salt until softened, then combine with chicken.
Melt butter, whisk in flour, then gradually add stock and milk, cooking until thickened.
Stir in chicken-apple mixture, beans, season, simmer 5 minutes, then stir in cheese until melted.
Notes
Serve with toppings like sour cream, scallions, or tortilla chips for added flavor.
