Ingredients

Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon finely grated lemon zest

Main ingredients

  • 2 cups diced cooked chicken
  • 2 cups cooked rice (any kind)
  • 1 cup diced celery
  • 1 cup diced zucchini
  • ½ cup chopped red onion
  • ½ cup chopped parsley

Instructions 

  • Combine olive oil, lemon juice, lemon zest, salt, and pepper in a large bowl.
  • Add chicken, rice, celery, zucchini, onion, and parsley; toss to combine.
