A delicious baked casserole combining fresh vegetables, rice, and melted cheeses for a comforting meal.
Ingredients
Vegetables and Rice

vegetable oil

yellow onion, finely diced

zucchinis, cut into 1-in cubes

summer squash, cut into 1-in cubes

medium cloves
garlic, minced

teaspoon
dried oregano

unsalted butter

tablespoons
all-purpose flour

2% or skim milk

tablespoons
heavy whipping cream

shredded mild cheddar cheese, divided
Salt and pepper

cooked white or brown rice

frozen corn (optional)

shredded Monterey jack cheese

Instructions
Preheat oven to 400F. Grease a 9x13 dish.
Sauté onion, zucchini, summer squash, garlic, and oregano until crisp-tender.
Make a sauce with butter, flour, milk, and cream; add 1/2 cup cheddar cheese.
Combine rice, sauce, vegetables, and corn; season with salt and pepper.
Transfer to dish, top with remaining cheeses and tomatoes, then bake 25-30 mins.
Garnish with basil, rest a few minutes, then serve warm.
Notes
For extra flavor, sprinkle with additional herbs or spices as desired.
