A comforting and cheesy casserole combining rice, tuna, and vegetables, perfect for a quick weeknight dinner.

Ingredients

Rice and Tuna

  • 3 cups cooked rice (white or brown)
  • 2 cans tuna (5 oz each, drained)

Vegetables and Aromatics

  • 1 small onion (finely chopped)
  • 1 clove garlic (minced)

Dairy and Seasonings

  • 1 cup whole milk
  • 1 teaspoon dried dill
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour (or gluten-free alternative)
  • 1 cup shredded cheese (cheddar or melty cheese)
  • 1 cup frozen peas (or other vegetables)

Instructions 

  • Cook rice if needed, then set aside.
  • Make a creamy sauce by melting butter, cooking onion, adding flour, then stirring in milk until thickened.
  • Sauté onion and garlic, then combine with rice, tuna, peas, and sauce. Mix in ¾ cup cheese.
  • Transfer mixture to a greased baking dish, top with remaining cheese, and bake at 375°F (190°C) for 20-25 minutes.
  • Let cool for 5 minutes before serving.

Notes

Use your favorite cheese for extra flavor or add more vegetables for variety.
