Instructions
Cook ground beef and onions in a skillet until browned and soft, about 8-10 minutes.
Add taco seasoning and salsa, stir to combine.
Stir in black beans, corn, and diced tomatoes; simmer 5-6 minutes until liquid reduces.
Add cooked rice, stir well, then top with shredded cheese.
Broil until cheese is bubbly, about 1 minute. Garnish and serve.
Notes
