Ingredients

Main Ingredients

  • 2 pieces corn on the cob (grilled until charred)
  • 1 pieces ripe avocado (pitted and scooped)
  • 1 pieces jalapeño pepper (deseeded and chopped)
  • 1 tablespoon lime juice (freshly squeezed)
  • 0.5 cup diced mangoes (fresh)
  • 1 cup romaine lettuce (shredded)
  • 8 pieces cherry tomatoes (halved)
  • 4 pieces tortillas (warmed)
  • 1 tablespoon olive oil
  • to taste sea salt

Instructions 

  • Preheat grill and char the corn until blackened.
  • Cut kernels off the grilled corn.
  • Blend avocado, jalapeño, lime juice, olive oil, and salt until smooth.
  • Spread sauce on tortillas, add corn, mango, lettuce, and tomatoes.
  • Fold and serve immediately.

Notes

For extra flavor, add a squeeze of lime before serving.
