Ingredients

Bell Peppers

  • 1 can salmon (14.75 oz)
  • 1 cup cooked rice
  • 0.25 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried basil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 cup shredded cheddar cheese

Fresh parsley, chopped

Instructions 

  • Preheat oven to 375°F (190°C).
  • Cut tops off peppers, remove seeds, and place in baking dish.
  • Sauté onion and garlic in olive oil until soft.
  • Mix rice, salmon, lemon juice, basil, salt, and pepper; stuff peppers and top with cheese.
  • Bake for 25-30 minutes until cheese melts and peppers are tender. Garnish with parsley.
