California Fig and Apple Crisp with Ginger

A delightful dessert combining sweet apples and figs with a spicy ginger topping for a perfect fall treat.

Ingredients

Filling

  • 2 tbsp sugar
  • 1 tsp cornstarch
  • 1.5 lbs apples (peeled, cored, and cut into 1/2" chunks)
  • 1.5 cups Orchard Choice or Sun-Maid California Figs (stemmed and quartered)
  • 2 tsp fresh lemon juice
  • 1 tsp grated fresh ginger

Topping

  • 1/2 cup walnuts (toasted and chopped)
  • 1/2 cup old fashioned oats
  • 1/2 cup unbleached all-purpose flour
  • 1/4 cup light brown sugar (packed)
  • 2 tbsp granulated sugar
  • 3/4 tsp ground ginger
  • 1/8 tsp table salt
  • 6 tbsp unsalted butter (melted)

Instructions 

  • Preheat oven to 350°F (175°C).
  • Mix sugar, cornstarch, lemon juice, and ginger; toss with apples and figs.
  • Combine oats, flour, brown sugar, granulated sugar, ginger, salt, walnuts, and melted butter to make topping.
  • Spread filling in a baking dish and top with crumble mixture.
  • Bake for 40 minutes until golden and bubbly.

Notes

Serve warm with vanilla ice cream for an extra treat.
