Instructions
Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned, about 5 minutes.
Add diced onions and peppers; cook until vegetables are tender, about 5 minutes.
Stir in garlic and Cajun seasoning; cook for 1 minute.
Add rice and chicken broth; bring to a boil, then reduce heat to low, cover, and simmer until rice is cooked, about 15 minutes.
Fluff rice with a fork, garnish with parsley and green onions if desired, and serve with hot sauce.
Notes
For extra flavor, let the rice rest for 5 minutes before serving.
