A flavorful one-pan dish combining smoky sausage, colorful peppers, and seasoned rice for a quick and satisfying meal.

Ingredients

Meat

  • 12 oz Smoked Sausage such as Andouille or Kielbasa (sliced into ½-inch rounds)
  • 1 cup Long-grain white rice (rinsed)

Vegetables

  • 1 piece Red Bell Pepper (diced)
  • 1 piece Green Bell Pepper (diced)
  • 1 medium Onion (yellow or white, diced)
  • 3 cloves Garlic (minced)
  • 1.5 cups Chicken Broth
  • 2 tbsp Cajun Seasoning (store-bought or homemade)
  • 1 tbsp Olive Oil
  • to taste Salt and Pepper Salt and Pepper
  • optional Fresh Parsley (for garnish)
  • optional Green Onions (for garnish)
  • optional Hot Sauce (for serving)

Instructions 

  • Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned, about 5 minutes.
  • Add diced onions and peppers; cook until vegetables are tender, about 5 minutes.
  • Stir in garlic and Cajun seasoning; cook for 1 minute.
  • Add rice and chicken broth; bring to a boil, then reduce heat to low, cover, and simmer until rice is cooked, about 15 minutes.
  • Fluff rice with a fork, garnish with parsley and green onions if desired, and serve with hot sauce.

Notes

For extra flavor, let the rice rest for 5 minutes before serving.
