Bread
8cupsbrioche bread (cut into 1-inch cubes)
2cupswhole milk
1cupheavy cream
¾cupgranulated sugar
½cupbrown sugar (packed)
5largeeggs
2teaspoonsvanilla extract
1teaspoonground cinnamon
½teaspoonground nutmeg
¼teaspoonsalt
½cupraisins (optional)
½cuppecans (chopped)
¼cupbutter (unsalted)
½cupbrown sugar (packed) for sauce
¼cupheavy cream for sauce
1teaspoonvanilla extract for sauce
1pinchsalt for sauce
Instructions
Preheat oven to 350°F (175°C). Grease a 9x13-inch dish.
Arrange bread cubes in dish, sprinkle raisins if using. Set aside.
Whisk milk, cream, sugars, eggs, vanilla, cinnamon, nutmeg, and salt until combined. Pour over bread, add nuts if desired, and soak for 15 minutes.
Bake for 45-55 minutes until golden. Meanwhile, make the sauce by melting butter, adding brown sugar, then whisking in cream, vanilla, and salt. Serve pudding drizzled with warm sauce.
Notes
For extra flavor, add a splash of bourbon to the custard mixture.
