Delicious and wholesome blueberry oat pancakes perfect for a hearty breakfast or brunch.
Ingredients
Dry ingredients

old fashioned oats

tablespoons
granulated sugar

baking powder

ground cinnamon

kosher salt
Wet ingredients

large
egg

tablespoons
unsalted butter (melted)

whole milk

vanilla extract
Add-ins

fresh blueberries
Instructions
Add oats to a blender and process until fine powder.
Mix dry ingredients in a bowl. In another, whisk egg, milk, melted butter, and vanilla.
Combine wet and dry, then fold in blueberries. Rest batter while skillet heats.
Cook about 2 minutes per side until golden and cooked through.
Serve with syrup, fruit, or dusting of sugar.
Notes
For extra flavor, add a dash of vanilla or cinnamon to the batter.
