A healthy and delicious overnight pudding made with chia seeds, almond milk, and fresh berries, perfect for a quick breakfast or snack.

Ingredients

Dried ingredients

  • 0.25 cup chia seeds
  • 1 cup unsweetened almond milk
  • 0.5 teaspoon pure vanilla extract
  • 1 cup mixed fresh berries
  • 1-2 teaspoons maple syrup or honey (optional) (Adjust to taste)

Instructions 

  • Combine chia seeds, almond milk, and vanilla extract in a bowl or jar. Stir well.
  • Cover and refrigerate for at least 4 hours or overnight, stirring once or twice.
  • Stir the pudding to smooth the texture. Add sweetener if desired.
  • Layer in glasses or bowls with berries on top or folded in.
  • Serve immediately or refrigerate for up to 2 days.

Notes

For added flavor, try topping with a drizzle of honey or additional berries.
