A delicious layered cake featuring fresh berries and whipped cream, perfect for special occasions or a sweet treat.

Ingredients

Dry Ingredients

  • 2 1/3 cups cake flour (spooned leveled)
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt

Wet Ingredients

  • 7 tbsp salted butter, softened (at room temperature)
  • 1/3 cup vegetable oil
  • 1 3/4 cup granulated sugar
  • 5 large egg whites
  • 1 tbsp vanilla extract
  • 1/2 cup full fat sour cream (at room temperature)
  • 1 cup milk (at room temperature)

Berries

  • 2 1/2 cups fresh sliced strawberries
  • 3/4 cup fresh blackberries (slice in half if huge)
  • 3/4 cup fresh blueberries
  • 1 tbsp granulated sugar
  • 2 tbsp raspberry preserves or strawberry jam

Whipped Cream

  • 2 cups cold heavy cream
  • 1/3 cup powdered sugar
  • 1 tbsp vanilla extract

Instructions 

  • Preheat oven to 350°F, prepare two 9-inch pans with parchment and flour coating.
  • Whisk dry ingredients in a bowl. Cream butter, oil, and sugar; add egg whites, sour cream, and vanilla. Mix in dry ingredients alternately with milk until just combined.
  • Divide batter evenly into pans and bake for 21-26 minutes. Cool completely on racks.
  • Mix berries with sugar and jam; let rest. Beat heavy cream with powdered sugar and vanilla until stiff peaks form.
  • Assemble the cake: layer with whipped cream and berries, then top with remaining berries. Chill briefly before serving.

Notes

Use fresh berries for best flavor and texture. Chill the cake for 30 minutes before serving for cleaner slices.
