A flavorful and easy sheet pan dinner featuring tender BBQ chicken with roasted vegetables, perfect for a quick weeknight meal.

Ingredients

Protein

  • 4 pieces boneless skinless chicken breasts (about 2 pounds, pounded to an even thickness)
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 0.5 cup barbecue sauce (divided)
  • 1 pound baby potatoes (halved lengthwise)
  • 1 large red onion (cut in half, then sliced about ¼-inch thick)
  • 1 medium zucchini (cut in half lengthwise, then sliced about ¼ inch thick)
  • 4 ears corn (husked and cut into 2-inch sections)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon paprika

Garnish

  • to taste chopped parsley (for garnish)

Instructions 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Pat chicken dry, season with salt and pepper, and brush with half of the barbecue sauce. Place on the sheet pan, spaced apart.
  • Mix potatoes, onion, zucchini, corn, olive oil, salt, garlic powder, onion powder, and paprika. Arrange vegetables around chicken.
  • Bake for 50 minutes. Brush remaining barbecue sauce on chicken, bake for 5 more minutes until cooked through.
  • Garnish with chopped parsley before serving.

Notes

Ensure chicken reaches an internal temperature of 165°F (74°C) before serving.
