A delicious flatbread topped with flavorful crockpot BBQ chicken, pineapple, and cheeses, perfect for a quick and satisfying meal.

Ingredients

Flatbread

  • 7.5 oz flatbread
  • 2 tbsp minced garlic

Crockpot BBQ Chicken

  • 1.5 lb chicken breast
  • 1 3/4 cups chicken broth
  • 12 oz bbq sauce
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 1/4 cups shredded mozzarella cheese
  • 1/3 cup shredded monterey jack with jalapeno peppers
  • 1/4 cup red onion, sliced lengthwise
  • 1 cup pineapple, finely chopped
  • 2 tbsp cilantro

Additional Toppings

  • to taste additional bbq sauce

Instructions 

  • Preheat oven to 425°F (220°C).
  • Add minced garlic to the flatbread and bake for 3 minutes.
  • Remove from oven, add toppings (except cilantro), and bake for 7-9 minutes.
  • Top with fresh cilantro, drizzle with bbq sauce, and serve.

Notes

For best results, prepare the crockpot chicken ahead of time.
