A quick and flavorful flatbread topped with BBQ chicken, cheese, and fresh herbs, perfect for a casual meal or appetizer.

Ingredients

Flatbreads

  • 2 pieces flatbreads naan, store-bought flatbread, or pita bread (4 pieces)
  • 2 cups shredded cooked chicken (rotisserie recommended)
  • 1.5 cups shredded mozzarella or a mozzarella smoked gouda blend
  • 0.5 red onion red onion (thinly sliced)
  • 2 cloves garlic (minced)
  • Fresh cilantro (for garnish)
  • Sliced scallions (for garnish)
  • Optional jalapeño slices, corn, avocado (after baking)

Instructions 

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment or foil.
  • Toss shredded chicken with BBQ sauce. Spread flatbreads on the sheet, add sauce, chicken, red onion, and garlic.
  • Top with shredded cheese and optional smoked gouda. Bake for 10-12 minutes until golden and bubbly.
  • Remove from oven, let cool 2 minutes, then garnish with cilantro and scallions. Slice and serve immediately.

Notes

For extra flavor, sprinkle smoked gouda on top before baking.
