red bell peppers, tops removed and seeded

Instructions
Heat oil in a pan, cook red onion until translucent, then add ground beef and cook until no longer pink.
Mix in barbecue sauce, 1 cup of cheddar cheese, black pepper, and salt; remove from heat.
Place each pepper on foil to keep upright, fill with meat mixture.
Grill peppers on medium low for 20-25 minutes until tender, then sprinkle with remaining cheese and grill 2 more minutes until melted.
Remove from grill, drizzle with barbecue sauce, cool for 5-10 minutes, then serve.
Notes
For extra flavor, add chopped cilantro or a squeeze of lime before serving.
