Ingredients

Meat and Vegetables

  • 1 pound ground beef
  • ½ cup finely chopped red onion
  • 6 small to medium-sized red bell peppers, tops removed and seeded

Sauces and Seasonings

  • 1 cup Sweet Baby Ray's Original Barbecue Sauce
  • 1 tsp ground black pepper
  • ¾ teaspoon salt

Cheese

  • 2 cups shredded cheddar cheese

Other

  • Oil Oil

Instructions 

  • Heat oil in a pan, cook red onion until translucent, then add ground beef and cook until no longer pink.
  • Mix in barbecue sauce, 1 cup of cheddar cheese, black pepper, and salt; remove from heat.
  • Place each pepper on foil to keep upright, fill with meat mixture.
  • Grill peppers on medium low for 20-25 minutes until tender, then sprinkle with remaining cheese and grill 2 more minutes until melted.
  • Remove from grill, drizzle with barbecue sauce, cool for 5-10 minutes, then serve.

Notes

For extra flavor, add chopped cilantro or a squeeze of lime before serving.
