Bell Peppers

red bell peppers
(preferably red or yellow for sweetness)

olive oil

white onion
(finely chopped)

garlic
(freshly minced)

ground beef
(grass-fed for richer taste)

BBQ sauce
(smoky and sweet, preferred brand)

Worcestershire sauce

cooked rice
(whole grain or white)

Instructions
Preheat oven to 180°C (355°F). Cut tops off peppers, remove seeds, brush insides with olive oil.
Sauté onion in olive oil until translucent, then add garlic and cook for 1 minute.
Add beef, cook until browned, then stir in BBQ sauce, Worcestershire, paprika, salt, and pepper. Simmer for 5 minutes.
Mix in cooked rice, stuff peppers with beef mixture, top with cheese.
Bake for 25 minutes until peppers are tender and cheese is melted and browned.
Notes
For extra flavor, let the stuffed peppers rest for 5 minutes before serving.
