Ingredients

Bell Peppers

  • 4 small red bell peppers (preferably red or yellow for sweetness)
  • 1 tablespoon olive oil (extra virgin for richer flavor)
  • 1 medium white onion (finely chopped)
  • 2 cloves garlic (freshly minced)
  • 1 pound ground beef (grass-fed for richer taste)
  • 1 cup BBQ sauce (smoky and sweet, preferred brand)
  • 1 tablespoon Worcestershire sauce
  • 1 cup cooked rice (whole grain or white)
  • 2 cup shredded cheddar cheese (aged for strong flavor)
  • 1 teaspoon smoked paprika (adds depth of smoky flavor)
  • 0.5 teaspoon salt (to taste)
  • 0.5 teaspoon ground black pepper (freshly ground)

Instructions 

  • Preheat oven to 180°C (355°F). Cut tops off peppers, remove seeds, brush insides with olive oil.
  • Sauté onion in olive oil until translucent, then add garlic and cook for 1 minute.
  • Add beef, cook until browned, then stir in BBQ sauce, Worcestershire, paprika, salt, and pepper. Simmer for 5 minutes.
  • Mix in cooked rice, stuff peppers with beef mixture, top with cheese.
  • Bake for 25 minutes until peppers are tender and cheese is melted and browned.

Notes

For extra flavor, let the stuffed peppers rest for 5 minutes before serving.
