Ingredients

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 scant cup protein powder (vanilla whey or plant-based)
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt

Wet Ingredients

  • 2 ripe bananas ripe bananas (mashed)
  • 2 eggs eggs
  • 0.5 cup Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 tablespoon sweetener (e.g., honey, maple syrup)

Instructions 

  • Mix all dry ingredients in a large bowl until evenly combined.
  • In a separate bowl, mash bananas and mix in eggs, Greek yogurt, vanilla extract, and sweetener.
  • Gently fold wet mixture into dry ingredients until just combined.
  • Fill muffin cups about two-thirds full; lightly spray liners if using.
  • Bake at 350°F (175°C) for 18-22 minutes; test with a toothpick for doneness.

Notes

For extra flavor, add cinnamon or nuts to the batter.
