A delicious and easy sheet pan meal featuring tender chicken and colorful vegetables glazed with a tangy balsamic sauce.

Ingredients

Protein

  • 2 pieces boneless skinless chicken breasts or thighs

Vegetables

  • 2 cups assorted vegetables (bell peppers, zucchini, cherry tomatoes, red onion)

Seasonings and Oils

  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 0.25 cup balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic minced
  • 0.5 teaspoon Italian seasoning

Instructions 

  • Preheat oven to 400°F (200°C). Toss chicken and vegetables with olive oil, salt, pepper, garlic powder, and Italian seasoning.
  • Arrange chicken and vegetables on a sheet pan. Roast for 20-25 minutes until cooked through.
  • Meanwhile, whisk together balsamic vinegar, honey, Dijon mustard, and minced garlic to make the glaze.
  • Brush the cooked chicken and vegetables with the balsamic glaze and serve.

Notes

For extra flavor, marinate the chicken in the balsamic mixture for 30 minutes before roasting.
