A vibrant and flavorful Middle Eastern-inspired chickpea salad perfect for a quick, healthy meal or side dish.

Ingredients

  • 1 can chickpeas (15 oz can, drained and rinsed)
  • 0.5 cup lemon-cumin dressing (store-bought or homemade)
  • 0.25 cup fresh parsley (chopped)
  • 0.25 cup mint (chopped)
  • 1 cup diced vegetables (cucumber, tomatoes, bell peppers)

Instructions 

  • Combine chickpeas, diced vegetables, parsley, and mint in a bowl.
  • Pour lemon-cumin dressing over the mixture and toss to combine.
  • Season with salt and pepper to taste.
  • Serve immediately or chill for 30 minutes for enhanced flavor.
