Ingredients

Dairy

  • 0.75 cup granulated sugar
  • 3.5 cups whole milk
  • 1.5 cups heavy cream

Flavorings

  • 1 tsp vanilla extract
  • 0.5 tsp ground cinnamon

Grains

  • 0.75 cup arborio rice

Eggs

  • 2 eggs eggs

Butter & Sugar

  • 3 tbsp butter
  • 3 tbsp brown sugar

Fruits

  • 2 peaches peaches (peeled, pitted, and diced)
  • 1 tsp ground cinnamon
  • 0.25 tsp nutmeg

Instructions 

  • Preheat oven to 350°F (175°C). In a saucepan, combine milk, cream, sugar, vanilla, and cinnamon; heat until warm.
  • Stir in rice and cook for 5 minutes. Remove from heat and let cool slightly.
  • In a bowl, beat eggs and then mix into the rice mixture. Pour into a baking dish.
  • Bake for 40-50 minutes until set and golden. Top with diced peaches and sprinkle with cinnamon and nutmeg.
  • Serve warm or chilled. Enjoy your delicious baked rice pudding with peaches!

Notes

For a creamier pudding, let it sit for 10 minutes before serving.
