A flavorful baked dish combining tender chicken thighs with sweet figs and a citrus-fig glaze, perfect for a cozy dinner.

Ingredients

Meat

  • 6 pieces bone-in chicken thighs (about 3 pounds)
  • 0.25 cup orange juice
  • 2 tablespoons fig jam
  • 3 to 4 tablespoons olive oil (for glaze and roasting)
  • 2 teaspoons garlic powder
  • 1 teaspoon ground cumin
  • ½ to 1 teaspoon Tabasco sauce (or chili flakes) (optional)
  • 2 teaspoons salt
  • ½ teaspoon ground black pepper
  • 1 pound fresh figs (stemmed and cut in half)
  • 1 pound baby potatoes (optional, cut to 1½ inches)

Instructions 

  • Preheat oven to 425°F (220°C). Prepare a wire rack over a baking sheet and coat with cooking spray. Whisk orange juice, fig jam, 2 tbsp olive oil, garlic powder, cumin, and Tabasco to make the glaze.
  • Arrange chicken thighs on the baking sheet, season with salt and pepper, then brush with the glaze. Place fig halves nearby and drizzle with olive oil.
  • Roast for 40-45 minutes until chicken reaches 170°F (77°C) and skin is crisp. Roast potatoes on a separate sheet for 15-20 minutes until tender.
