Instructions
Preheat oven to 425°F (220°C). Prepare a wire rack over a baking sheet and coat with cooking spray. Whisk orange juice, fig jam, 2 tbsp olive oil, garlic powder, cumin, and Tabasco to make the glaze.
Arrange chicken thighs on the baking sheet, season with salt and pepper, then brush with the glaze. Place fig halves nearby and drizzle with olive oil.
Roast for 40-45 minutes until chicken reaches 170°F (77°C) and skin is crisp. Roast potatoes on a separate sheet for 15-20 minutes until tender.
