A nutritious and delicious baked breakfast featuring cottage cheese, oats, bananas, and fresh blueberries, perfect for a wholesome start to your day.

Ingredients

Dairy

  • 360 g cottage cheese (full fat recommended)
  • 4 large eggs (brought to room temperature)
  • 90 g old fashioned rolled oats (not quick oats)
  • 1 ripe banana (the spottier the better)
  • 80 ml maple syrup (⅓ cup)
  • 1 tsp baking soda
  • 150 g fresh blueberries (frozen works too)

Instructions 

  • Preheat oven to 350°F (180°C). Spray four bowls and place on a baking sheet.
  • Add cottage cheese, eggs, oats, banana, maple syrup, and baking soda to a blender. Blend until smooth.
  • Pour batter into bowls, top with blueberries, pressing some in.
  • Bake for 35-40 minutes until golden and firm. Cool for 10 minutes before serving.

Notes

This cooling time helps achieve a custardy texture.
