Ingredients

Protein

  • 1 lb large shrimp, peeled and deveined

Fruits & Vegetables

  • 2 ripe avocados avocados, diced
  • 1 cup cherry tomatoes, halved
  • 0.5 cup red onion, finely chopped
  • 1 cucumber cucumber, diced

Herbs & Citrus

  • 0.25 cup fresh cilantro, chopped
  • 1 lime lime, juiced

Oils & Seasonings

  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder

Salt & Pepper

  • to taste Salt and pepper

Additional

  • 1 cup fresh salsa (store-bought or homemade)
  • 2 cups mixed greens (optional, for serving)

Instructions 

  • Cook the shrimp until pink and opaque, about 3-4 minutes per side, then set aside to cool.
  • In a large bowl, combine diced avocados, cherry tomatoes, red onion, cucumber, cilantro, lime juice, olive oil, garlic powder, salt, and pepper. Mix well.
  • Add cooked shrimp and salsa to the bowl and toss gently to combine.
  • Serve the salad over mixed greens if desired, garnished with additional cilantro.

Notes

For extra flavor, marinate the shrimp in lime juice and seasonings before cooking.
