A fresh and vibrant avocado salad with a zesty lime dressing, perfect for a quick and healthy meal.

Ingredients

Vegetables and herbs

  • 0.5 piece jalapeño pepper (diced)
  • 0.33 cup diced red onion
  • 0.25 cup chopped fresh cilantro
  • 2 pieces firm-ripe avocados (pitted and cut into ½-inch pieces)
  • 0.5 piece English cucumber (cut into ½-inch pieces)
  • 0.75 cup cherry tomatoes (halved)
  • to taste flaky sea salt (optional)
  • 3 tablespoons fresh lime juice
  • 2 tablespoons avocado oil
  • 2.5 teaspoons honey
  • 1 clove garlic (grated)
  • 1 teaspoon sea salt
  • 0.25 teaspoon ground cumin

Seasoning

Instructions 

  • Whisk lime juice, avocado oil, honey, garlic, salt, cumin, and pepper to make the dressing.
  • Set aside some jalapeño, red onion, and cilantro for garnish.
  • Add avocados to a bowl, top with cucumber, tomatoes, and remaining jalapeño, onion, cilantro. Drizzle with dressing and gently toss.
  • Garnish with reserved jalapeño, onion, cilantro, and additional dressing if desired. Season with salt and pepper.
  • Serve immediately.

Notes

Use ripe avocados for best flavor and texture.
