Instructions
Whisk lime juice, avocado oil, honey, garlic, salt, cumin, and pepper to make the dressing.
Set aside some jalapeño, red onion, and cilantro for garnish.
Add avocados to a bowl, top with cucumber, tomatoes, and remaining jalapeño, onion, cilantro. Drizzle with dressing and gently toss.
Garnish with reserved jalapeño, onion, cilantro, and additional dressing if desired. Season with salt and pepper.
