A nutritious and delicious wrap combining creamy avocados, eggs, and whole-grain tortillas for a quick, satisfying meal.
Ingredients
Tortillas
4pieceswhole-grain tortillas 6 inch(for wraps)
2piecesavocados(peeled and seed removed)
3teaspoonsextra virgin olive oil
2teaspoonsbalsamic vinegar(optional, freshly squeezed lemon juice can be used)
4pieceseggs(free-range)
0.25teaspoonkosher or sea salt
0.25teaspoonblack pepper
Instructions
Preheat oven to 350°F (175°C). Wrap tortillas in foil and heat for 10 minutes.
Combine mashed avocados, 1 teaspoon olive oil, and vinegar in a bowl. Set aside.
Heat 2 teaspoons olive oil in a nonstick skillet over medium-low heat. Add eggs one at a time, cook until whites are set and yolks are slightly thickened.
Spread avocado mixture over warm tortillas. Top with cooked eggs. Season with salt and pepper.
Roll into wraps and serve immediately.
