Ingredients

Canned Goods

  • 1 can 15 oz chickpeas (drained and rinsed)
  • 2 ripe avocados (diced)
  • 1 cup cherry tomatoes (halved)
  • 0.5 cup diced cucumber
  • 0.25 cup diced red onion
  • 0.25 cup diced bell peppers (any color)
  • 0.25 cup chopped fresh cilantro
  • 1 lemon juice of lemon
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • to taste Salt and pepper
  • 4 whole whole wheat tortillas

Instructions 

  • Combine chickpeas, avocados, cherry tomatoes, cucumber, red onion, bell peppers, and cilantro in a bowl.
  • Whisk lemon juice, olive oil, cumin, salt, and pepper to make the dressing.
  • Pour dressing over the mixture and toss gently to coat.
  • Warm tortillas briefly, then divide the filling among them, placing it off-center.
  • Roll up the tortillas into wraps, slice in half, and serve immediately.

Notes

For extra flavor, add a dash of hot sauce or a sprinkle of cheese.
