A fresh and flavorful salad combining crunchy vegetables, tender chicken, and a tangy sesame-ginger vinaigrette.

Ingredients

Vegetables

  • 2 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1 cup shelled edamame steamed

Protein

  • 2 pieces grilled chicken breasts, sliced or shredded

Green Onions

  • 2 pieces green onions, sliced

Optional toppings

  • sesame seeds
  • sliced almonds
  • wonton strips
  • cilantro

Dressing

  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated fresh ginger
  • 1 small garlic clove, minced
  • Optional splash of lime juice or sriracha for a kick

Instructions 

  • Combine cabbage, carrots, edamame, and green onions in a large bowl.
  • Top with sliced grilled chicken.
  • Whisk together vinaigrette ingredients until well blended.
  • Pour dressing over salad and toss gently to combine.
  • Sprinkle with sesame seeds or other toppings, and serve immediately.

Notes

For extra flavor, add a splash of lime juice or sriracha.
