Ingredients

Dough

  • 0.5 recipe Blitz Puff Dough (rolled to 3 mm)
  • 227 grams granulated sugar
  • 227 grams salted butter

Filling

  • 900 grams Granny Smith apples (peeled and cut into 12 pieces)
  • 340 grams cold unsalted butter (European-style)
  • 340 grams bread flour
  • 5 grams kosher salt
  • 170 grams ice water (about 2 teaspoons)

Cider Glaze

  • 750 ml apple cider
  • 150 grams granulated sugar
  • 5 grams pectin

Instructions 

  • Prebake the puff pastry until golden, then let it cool.
  • Arrange apple pieces on the cooled pastry.
  • Simmer apple cider with sugar and pectin until thickened to make the glaze.
  • Brush the apples with the cider glaze for a shiny finish.
  • Serve slices with extra glaze if desired.

Notes

For best results, chill the tart before serving to set the glaze.
