A creamy and flavorful risotto infused with fresh apples and herbs, perfect for a comforting meal.

Ingredients

Broth

  • 6 cups Low-Sodium Chicken Broth
  • 1 tablespoon Extra-Virgin Olive Oil
  • 2 tablespoons Unsalted Butter
  • 1 large Shallot, (finely diced (½ cup))
  • 2 apples Apples, (peeled, cored and grated, Gala, Fuji or Macintosh (1 ½ cups))
  • 2 teaspoons minced Fresh Rosemary
  • 2 cups Arborio Rice
  • 1 teaspoon Salt
  • 2 cups Apple Cider
  • 1.5 cups finely grated Parmesan Cheese
  • Black Pepper Black Pepper

Instructions 

  • Bring broth to a boil, then reduce to low and keep warm.
  • Cook shallot, apple, and rosemary in olive oil and butter until softened, then add rice and salt; cook until translucent.
  • Add 1 cup cider; cook until reduced. Repeat with remaining cider.
  • Gradually add broth, stirring until absorbed, until rice is creamy and tender, about 40 minutes.
  • Stir in Parmesan and remaining butter; season with salt and pepper, then serve.

Notes

Use fresh apples for best flavor and adjust broth as needed for desired creaminess.
