Instructions
Bring broth to a boil, then reduce to low and keep warm.
Cook shallot, apple, and rosemary in olive oil and butter until softened, then add rice and salt; cook until translucent.
Add 1 cup cider; cook until reduced. Repeat with remaining cider.
Gradually add broth, stirring until absorbed, until rice is creamy and tender, about 40 minutes.
Stir in Parmesan and remaining butter; season with salt and pepper, then serve.
Notes
Use fresh apples for best flavor and adjust broth as needed for desired creaminess.
