A crunchy, wholesome granola packed with dried cranberries, nuts, and apple flavor, perfect for a healthy breakfast or snack.

Ingredients

Dry ingredients

  • 30 g raw buckwheat groats (soaked in boiling water for 20 minutes)
  • 30 g dried cranberries (or sultanas)
  • 30 g hazelnuts (or almonds)
  • 100 g whole rolled oats (gluten-free if required)
  • 25 g pumpkin seeds (or sunflower seeds)
  • 7 g ground flax seeds
  • 30 g liquid sweetener (maple syrup or other)
  • 30 ml liquid oil (drippy almond butter or refined coconut oil)
  • 60 g apple sauce (smooth)
  • ¾ tsp cinnamon
  • ¼ tsp baking soda
  • 1/8 tsp fine salt

Instructions 

  • Soak buckwheat in boiling water and cranberries and nuts in cold water for 20 minutes, then drain.
  • Preheat oven to 130°C (265°F) with fan or 150°C (300°F) without, and line a baking tray with non-stick paper.
  • Mix apple sauce, ground flax, oil, and maple syrup; let sit for 10 minutes.
  • Add oats, seeds, drained buckwheat, cranberries, nuts, cinnamon, baking soda, and salt; mix well.
  • Spread mixture on tray and bake for 35-40 minutes, stirring after 20 minutes.
  • Cool completely before storing in an airtight container.

Store in an airtight container for up to a few weeks.
