Instructions
Preheat oven to 350°F (175°C). Prepare apple filling by mixing diced apples, 2 tsp butter, 2 tsp brown sugar, cinnamon, and salt.
In a separate bowl, beat butter, brown sugar, and granulated sugar until creamy. Add eggs and vanilla, mix well.
Stir in flour, baking soda, and oats to form the cookie dough.
Drop spoonfuls of dough onto baking sheets, top with apple filling, and bake for 20 minutes.
Allow cookies to cool, then dust with powdered sugar mixed with water for a sweet finish.
Notes
For best results, use fresh apples and ensure butter is at room temperature.
