Ingredients

Apple Preparation

  • 3 medium Honeycrisp apples, peeled and diced (about 3 to 3 1/2 cups)
  • 1 tablespoon unsalted butter (for sautéing)
  • 1 tablespoon brown sugar (for sautéing)
  • 1/4 teaspoon ground cinnamon

Dry Ingredients

  • 3 1/2 cups cake flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt

Cinnamon Sugar Filling

  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon all-purpose flour

Streusel Topping

  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1/2 cup melted unsalted butter (cooled slightly)
  • 1 cup all-purpose flour

Cake Batter

  • 1 cup unsalted butter (softened)
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 3 eggs eggs (room temp)
  • 1 tablespoon vanilla extract
  • 1 cup sour cream (full-fat)
  • 3/4 cup milk (whole milk)

Instructions 

  • Saute apples: melt 1 tbsp butter, add 1 tbsp brown sugar, apples, and cinnamon; cook 5-7 mins. Cool.
  • Mix dry ingredients: whisk flour, baking powder, baking soda, salt.
  • Prepare cinnamon filling: combine brown sugar, cinnamon, flour.
  • Make batter: beat butter, sugars; add eggs and vanilla; mix in sour cream and milk; incorporate dry ingredients.
  • Assemble: spread half batter in pan, add cinnamon filling, apples, then remaining batter; top with streusel.
  • Bake at 350°F (175°C) for 55-70 mins until golden and a tester comes out clean. Cool 45 mins before serving.

Ensure apples are diced small for even cooking and layering.
