Instructions
Microwave the chopped apple for 2-3 minutes until softened, then drain.
Mix flour, protein powder, baking powder, cinnamon, and salt in a bowl.
Whisk milk, yogurt, egg, melted butter, maple syrup, and vanilla in a separate bowl.
Combine wet and dry ingredients; stir until just blended. Toss apples in flour and fold into batter. Rest for 5-10 minutes.
Heat a skillet, add butter, and pour ¼ cup batter for each pancake. Cook until bubbles form, flip, and cook until set.
Notes
For extra flavor, top with fresh fruit or a drizzle of maple syrup.
