Delicious and nutritious pancakes packed with apple and cinnamon, perfect for a healthy breakfast.

Ingredients

Fruit

  • 1 small apple (peeled and chopped into 1" pieces (Fuji, Braeburn, Honeycrisp, Gala))
  • 0.75 cup all-purpose flour (regular or GF *see notes (plus a little extra to toss with the apples))
  • 30 g unflavored protein powder (*see notes)
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 0.25 tsp salt
  • 0.75 cup Fairlife 2% milk (or milk of choice)
  • 0.25 cup plain 2% Greek yogurt (or 5% (fat-free not recommended))
  • 1 large egg
  • 1 tbsp butter (melted and cooled slightly)
  • 1 tbsp maple syrup (good quality)
  • 0.5 tsp vanilla extract

Instructions 

  • Microwave the chopped apple for 2-3 minutes until softened, then drain.
  • Mix flour, protein powder, baking powder, cinnamon, and salt in a bowl.
  • Whisk milk, yogurt, egg, melted butter, maple syrup, and vanilla in a separate bowl.
  • Combine wet and dry ingredients; stir until just blended. Toss apples in flour and fold into batter. Rest for 5-10 minutes.
  • Heat a skillet, add butter, and pour ¼ cup batter for each pancake. Cook until bubbles form, flip, and cook until set.

Notes

For extra flavor, top with fresh fruit or a drizzle of maple syrup.
