Apple Filling

apple, peeled, cored, and chopped

Instructions
Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
Mix dry ingredients in a bowl. In another bowl, whisk wet ingredients and chopped apple.
Combine wet and dry ingredients until just mixed. Fill muffin cups about 2/3 full.
Mix apple filling ingredients and spoon over batter in each muffin cup.
Bake for 20 minutes or until a toothpick inserted comes out clean. Cool before serving.
Notes
For extra flavor, sprinkle with additional cinnamon before baking.
