Ingredients

Dry Ingredients

  • 1.5 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 0.5 cup packed brown sugar
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon salt

Wet Ingredients

  • 0.33 cup vegetable or canola oil
  • 1 large egg
  • 0.33 cup milk

Apple Filling

  • 1 large apple, peeled, cored, and chopped
  • 0.25 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter, at room temperature
  • 1 teaspoon ground cinnamon

Instructions 

  • Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  • Mix dry ingredients in a bowl. In another bowl, whisk wet ingredients and chopped apple.
  • Combine wet and dry ingredients until just mixed. Fill muffin cups about 2/3 full.
  • Mix apple filling ingredients and spoon over batter in each muffin cup.
  • Bake for 20 minutes or until a toothpick inserted comes out clean. Cool before serving.

Notes

For extra flavor, sprinkle with additional cinnamon before baking.
