Instructions
Season the chuck roast with 1 teaspoon of salt and black pepper.
Sear the roast in olive oil and 1 tablespoon of butter until browned on all sides.
Add onions, garlic, herbs, cinnamon, cloves, tomato paste, and cook for a few minutes.
Pour in chicken broth, apple cider, and add the roast back. Cover and simmer for 3 hours.
Add potatoes and carrots, cook until tender, then thicken sauce with flour and butter mixture. Finish with apple slices and brown sugar.
Notes
For a richer flavor, let the roast rest for 10 minutes before slicing.
