Ingredients

Bananas

  • 3 medium overripe bananas (mashed) ((1 ¼ - 1 ½ cup))
  • 3 eggs eggs
  • ½ cup pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 2 cups almond flour (packed)
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon sea salt
  • cup chocolate chips (optional, plus more for topping)

Instructions 

  • Preheat oven to 350°F (175°C) and prepare a loaf pan.
  • Mix mashed bananas, eggs, maple syrup, and vanilla in a bowl.
  • Add almond flour, baking powder, cinnamon, and salt; stir until combined.
  • Fold in chocolate chips, then pour batter into pan and top with extra chips if desired.
  • Bake for 60-70 minutes until a toothpick comes out mostly clean.

Store in an airtight container for up to 3 days or freeze for longer storage.
