This quick and nourishing vegetable detox soup helps reduce bloating and boosts your energy in just 30 minutes.

Ingredients

Vegetables

  • 2 pieces carrots (chopped)
  • 1 stalk celery (chopped)
  • 1 piece onion (diced)
  • 2 cloves garlic (minced)
  • 1 piece zucchini (chopped)
  • 4 cups vegetable broth
  • 1 cup kale (chopped)
  • 1 tsp turmeric
  • 1 tsp ginger (grated)
  • to taste Salt and pepper

Instructions 

  • Heat olive oil in a large pot over medium heat.
  • Add onion, garlic, carrots, and celery. Cook for 5 minutes.
  • Add zucchini and cook for 3 minutes.
  • Pour in vegetable broth and bring to a boil, then simmer for 15 minutes.
  • Add kale, turmeric, and ginger. Cook for 5 minutes, season with salt and pepper, then serve hot.

Notes

Feel free to add a squeeze of lemon for extra flavor.
