A quick and flavorful Tex-Mex dish combining seasoned beef, rice, beans, and cheese for a satisfying meal in just 30 minutes.
Ingredients
Meat and grains

ground beef

cup
uncooked white rice
1
cup
salsa
1
can 15 oz
black beans, drained and rinsed

cup
frozen corn

cup
water
1
tsp
chili powder
1/2
tsp
cumin
to taste
Salt and pepper

shredded cheddar cheese

Fresh cilantro, chopped

Sour cream
(for serving)
Instructions
Cook the ground beef in a large skillet over medium heat until browned. Drain excess fat.
Add rice, salsa, beans, corn, water, chili powder, cumin, salt, and pepper. Stir and bring to a boil.
Reduce heat to low, cover, and simmer for 20-25 minutes until rice is tender and liquid absorbed.
Remove from heat, sprinkle cheese on top, cover until melted.
Garnish with cilantro and serve with sour cream if desired.
Notes
Feel free to customize with your favorite toppings or add hot sauce for extra flavor.
