A quick and flavorful Tex-Mex dish combining seasoned beef, rice, beans, and cheese for a satisfying meal in just 30 minutes.

Ingredients

Meat and grains

  • 1 lb ground beef
  • 1 cup uncooked white rice
  • 1 cup salsa
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 cup water
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • to taste Salt and pepper
  • 1 cup shredded cheddar cheese
  • optional Fresh cilantro, chopped (for garnish)
  • optional Sour cream (for serving)

Instructions 

  • Cook the ground beef in a large skillet over medium heat until browned. Drain excess fat.
  • Add rice, salsa, beans, corn, water, chili powder, cumin, salt, and pepper. Stir and bring to a boil.
  • Reduce heat to low, cover, and simmer for 20-25 minutes until rice is tender and liquid absorbed.
  • Remove from heat, sprinkle cheese on top, cover until melted.
  • Garnish with cilantro and serve with sour cream if desired.

Notes

Feel free to customize with your favorite toppings or add hot sauce for extra flavor.
